Things I make....Christmas dessert!

Well, I am quite infatuated by the page 25 Clever Ideas for the Household!

My latest adventure was with the cookie dough cups! First batch was a disaster! Cookie circles were cut too big and too thick, so I ended up with a stuck together mess of chocolate chip! These were not wasted however, we had the for afternoon tea!

Anyhow, lessons learned and progress was made! 20 successful cookie dough cups contributed to my dessert creation for the Christmas party I attended today...

Recipe:



  • Cookie dough cups from 25 Clever Ideas for the Household

  • Mixed berries - fresh or frozen

  • Thickened cream

  • Sugar

  • Cinnamon

  • Vanilla essence

  • Dark cooking chocolate

  • Christmas decorations



Make up your cookie dough cups. These can be created the day before, but make sure you seal them in an airtight container so they don't go soggy!

In a bowl, pour your thickened cream. Add some cinnamon to taste, one cap full of vanilla essence and approx 2 tablespoons of caster sugar. Blend well using electric beaters...until you get a smooth, thick cream mix. Place in the fridge until ready to use. A few hours is ideal, as the cream really sets.

Grate up some dark cooking chocolate.

When ready to serve...



Fill each cookie cup about half way with mixed berries. Add a generous dollop of the cream. Sprinkle grated chocolate over the cream and decorate with your little Christmas cheer! You can also drizzle some of the berry juice over the top, if you used frozen berries...or use some hibiscus syrup! Yum!
